Banting Meringues

So I had some egg whites left and I decided to try some meringues.

INGREDIENTS:
2 egg whites
1 tsp vinegar
1 tsp baking powder
4 tablespoons xylitol

METHOD:
1. Whisk egg whites,  baking powder,  vinegar, xylitol
2. Place on baking parchment
3. Bake in oven for 1 hour at 100°C
4. Cool in oven for 1 hour
5. Serve with cream and strawberries

  1. mine came out very soft and didnt "set" to dry and crunchy. did i do something else wrong that i missed? if i put it back in the oven do u think it will help?
